CREAM OF FRESH GREEN BEAN SOUP ..a nice fresh green bean recipe to try !

INGREDIENTS
  • 1 1/2 lbs. very fresh green beans, stems and strings removed
  • 2 c. milk, hot but not scalded
  • Salt and fresh black pepper to taste
  • Optional--small amounts of minced fresh basil and chives

INSTRUCTIONS
1. Steam the beans until just tender and bright green.
2. Puree them with the milk until very smooth.
3. Season to taste. Heat just before serving. Don't boil or cook it or serve it cold.
The fresh green bean recipe is ready to serve....enjoy the soup !

FRESH GREEN BEAN RECIPE

INGREDIENTS
  • 1 lb. fresh green beans, trim ends and cook until tender.
  • Drain 1 stick butter,
  • melted 1 tsp. garlic
  • salt 1 tsp.
  • dill weed 1 tsp.
  • parsley flakes

INSTRUCTIONS
Saute garlic salt, dill weed and parsley flakes in melted butter in large skillet. Add cooked beans. Stir mixture over beans and simmer until ready to serve. Enjoy !

GREEN BEANS WITH TOMATOES AND FETA

Try this impressive fresh green bean recipe as a side dish, choose this with tomatoes and feta...it's simply delicious!

INGREDIENTS
  • 2 boxes (7.4 oz each) Cascadian Farm® frozen organic French-cut green beans with toasted almonds
  • 1 tablespoon olive oil
  • 1 medium onion, sliced
  • 2 cloves garlic, finely chopped
  • 1 can (14.5 oz) Muir Glen® organic diced tomatoes, undrained
  • 1 teaspoon chopped fresh oregano leaves or 1/2 teaspoon dried oregano leaves
  • 1/8 teaspoon crushed red pepper, if desired
  • 1/2 cup crumbled feta cheese

INSTRUCTIONS
Cook beans as directed on boxes, reserving almonds; drain.
Meanwhile, in 10-inch skillet, heat oil over medium heat. Cook onion nd garlic in oil 3 to 4 minutes, stirring frequently, until onion is crisp-tender. Stir in tomatoes, oregano and red pepper. Heat to boiling. Reduce heat; simmer uncovered about 5 minutes, stirring occasionally, until thickened and most of liquid is evaporated.
Spoon drained beans onto serving platter; top with tomato mixture.
Sprinkle with cheese and reserved almonds.

GREEN BEAN CASSEROLE AMANDINE

FRESH GREEN BEAN CASSEROLE AMANDINE ... a nice fresh green bean recipe to try !

INGREDIENTS
  • 2 cups French-Style green beans
  • 1/2 cup celery, thinly sliced
  • 1 shallot, finely minced
  • 2 cloves garlic, thinly sliced
  • 1 10 oz can Campbell's Cream of Mushroom Soup
  • 1/2 cup water (from cooking the vegetables)
  • 1/2 teaspoon soy sauce
  • 1 tablespoon Kosher salt (for the boiling water)
  • 1/8 teaspoon freshly ground pepper
  • 2 teaspoons Worcestershire sauce
  • 1 tablespoon butter, melted
  • 1/4 cup slivered almonds

INSTRUCTIONS
Preheat oven to 350°F.
In a large saucepan, bring 3 quarts water to a boil; add 1 tablespoon Kosher salt.
If fresh green beans are not available, frozen may be used. Add beans and celery to boiling water and cook just until tender but not soft. Using a slotted spoon, transfer cooked vegetables to a bowl filled with ice and water. Green beans should still be a bright green color when cooled.

Butter a casserole baking dish and transfer vegetables to dish.
Combine 1/2 cup of the vegetable cooking water, 1/2 teaspoon soy sauce and the mushroom soup. Pour over vegetables.
Heat almonds, garlic and shallot with butter in the microwave until butter melts. Sprinkle buttered almonds over the top of the casserole, along with any remaining butter.
Bake at 350F for 20-25 minutes or until top is bubbly and lightly browned.
Variation: Top with caramelized onions before baking, if desired.

FRESH GREEN BEANS RECIPE IN GARLIC SAUCE

INGREDIENTS
  • 1 1/2 lbs.fresh green beans
  • 4 oz. fresh Shitake mushrooms (optional)
  • 1/2 cup grated Parmesan cheese (optional)
  • 1/4 cup extra virgin olive oil
  • 1 tablespoon butter
  • 1/4 cup fresh Italian parsley, chopped
  • pinch of fresh basil and oregano, minced
  • pinch of red pepper flakes
  • 1/2 cup plain bread crumbs (optional)
  • 8 cloves garlic, peeled

INSTRUCTIONS
In a saucepan, bring 5 cups water to a boil with 1 tablespoon salt.
Add fresh green beans (strings and ends removed). Boil beans for 4-5 minutes, until tender but not overcooked. When tender, shock beans in a bowl of ice water to prevent overcooking and retain bright green color. Remove after 30 seconds and let drain in colander.
In a large heavy bottom skillet, heat olive oil with cloves of garlic and mushrooms. Sauté until garlic becomes tan, but not brown.
Mash garlic into oil with the tines of a fork. Add cooled beans, parsley, butter and remaining ingredients. Toss with cheese and bread crumbs (optional) and the fresh green bean recipe is ready to serve when butter has melted....nice one !

Cook's Note: Garlic cloves may be removed before serving, or left in for added flavor, as desired. Garlic can be pureed or pressed through a sieve, but this will eliminate the "roasted" garlic flavor
which characterizes this dish. May be served either warm or cold (if served cold, omit butter).

Variations: A strip of lean bacon or Pancetta may be sautéed in olive oil before adding garlic, then crumbled in. For a piquant flavor, the beans may be served cold, as a salad, and dressed with a
few drops of freshly squeezed lemon or balsamic vinegar.

  • 30 ounces green beans, canned, drained*
  • 10 3/4 ounces Cream of Mushroom Soup
  • 3/4 cup milk
  • 2 3/4 ounces French-fried onions
  • 1/8 teaspoon pepper

INSTRUCTIONS
Combine green beans, soup, milk, pepper and 1/2 of the onions; gently stir together to mix well. Spread mixture in a 1 1/2 to 2 quart ovenproof casserole dish.
Bake at 350°F for 25 minutes. Top with remaining onions. Bake 5 minutes more.
Note: *May substitute 18 ounces frozen cut green beans, thawed and drained.

INGREDIENTS
  • 4 c. fresh green beans, 1" cut
  • 1/2 lb. sliced mushrooms
  • 1 tbsp. corn oil
  • 1/4 lb. sliced onions
  • Salt & pepper to taste

INSTRUCTIONS
Wash and drain beans, do not dry! Use a 12" skillet with tight lid. Put all ingredients in skillet. Cook over medium heat 15 to 20 minutes. Shake skillet to prevent sticking. The fresh green bean recipe is ready to serve 4 to 6. Enjoy it !
